The mighty 100kg Swiss Emmentalers may take up most of the room, but the little 'stinkers' from France still make their presence felt. English Cloth cheddars, Stilton, Roquefort and Gorgonzola, French Camemberts, Bries, Triple Creams, cheeses from sheep, goat, buffalo and cow milk. Literally hundreds.
The class begins with a factory tour.
